Description

Italian cheese for your cheese tasing. A refined cheese platter with traditional cheese.

Some kinds of cheese are offered whith the right ageing. Green cheese and Mountain cheese from Maritime Alps, made with cow and sheep milk.

TUMA DAL FEN (TUMA SOFT CHEESE WRAPPED IN HAY and made only with cow’s milk)

The cheese is made using whole cow’s milk, salt, rennet and lactic ferments. The ageing time is 15-20 days.
It has a cylindrical shape. The cheese is partially wrapped in the hay.
When the cheese is fresh it is milk white in colour and the rind is not yet present; when it is mature a white porcelain coloured rind is formed which is covered by a thin layer of white mould.
The paste is ivory white with a buttery taste on the palate.
The taste is sweet and delicate, reminiscent of fresh milk, slightly acidic and salty in the fresh forms. While in the more mature ones the aroma is more intense; this is due to the development of mould on the rind which intensifies its fragrant flavour. The rind is edible.

DOLCE VERDE DI ALTA LANGA (SWEET GREEN CHEESE FROM ALTA LANGA)

A cheese matured in the cellars of Castelmagno and cured in Bossolasco, situated in the Alta Langa area. This cheese has a delicate flavour and is produced with cow’s milk, rennet and salt.

RASCHERA DOP and MOUNTAIN’S RASCHERA DOP

Raschera DOP (Protected Designation of Origin – PDO) is a cow’s milk cheese, semi-fat, pressed, with a white or ivory white compact texture and dotted with small irregular holes. In the young forms the taste is fine and delicate whereas ripened Raschera is moderately tasty and typically fragrant.
In mountain pasture Raschera (raw cow’s milk, rennet and salt) the characteristic alpine scents and herbs prevail.

BRA TENERO (BRA SOFT CHEESE)

Raw milk, from selected Piedmontese breeds of cattle, is processed and matured according to the techniques that go back to an ancient tradition: this is the secret that gives rise to such a unique product.
Bra DOP (Protected Designation of Origin – PDO) is produced in two different types: “Bra Tenero” (soft) and “Bra Duro” (hard).
Both types have a cylindrical shape with flat sides. The minimum ageing should be 45 days for the soft type and 180 days for the hard one.
Bra soft, which has a light grey, smooth and regular rind, has a pleasant aroma and a less intense flavour.
