TUMA DAL FEN (TUMA CHEESE WRAPPED IN HAY and made only with cow’s milk)

The cheese is made using whole cow’s milk, salt, rennet and lactic ferments. The ageing time is 15-20 days.
It has a cylindrical shape. The cheese is partially wrapped in the hay.
When the cheese is fresh it is milk white in colour and the rind is not yet present; when it is mature a white porcelain coloured rind is formed which is covered by a thin layer of white mould.
The paste is ivory white with a buttery taste on the palate.
The taste is sweet and delicate, reminiscent of fresh milk, slightly acidic and salty in the fresh forms. While in the more mature ones the aroma is more intense; this is due to the development of mould on the rind which intensifies its fragrant flavour. The rind is edible.

DOLCE VERDE DI ALTA LANGA (SWEET GREEN CHEESE FROM ALTA LANGA)

A cheese matured in the cellars of Castelmagno and cured in Bossolasco, situated in the Alta Langa area. This cheese has a delicate flavour and is produced with cow’s milk, rennet and salt.

RASCHERA DOP and MOUNTAIN’S RASCHERA DOP

Raschera DOP (Protected Designation of Origin – PDO) is a cow’s milk cheese, semi-fat, pressed, with a white or ivory white compact texture and dotted with small irregular holes. In the young forms the taste is fine and delicate whereas ripened Raschera is moderately tasty and typically fragrant.
In mountain pasture Raschera (raw cow’s milk, rennet and salt) the characteristic alpine scents and herbs prevail.
It’s shape is square with flat sides, the rind is thin, smooth and dark grey.
To ensure a high quality product, Carla matures the forms of Raschera at 1,700 metres in Castelmagno in its cool, damp cellars: the ageing must be at least 30 days for cheese made with heat treated milk and at least 60 days for cheese made with raw milk.

BRA TENERO e DURO (BRA SOFT and HARD)

Raw milk, from selected Piedmontese breeds of cattle, is processed and matured according to the techniques that go back to an ancient tradition: this is the secret that gives rise to such a unique product.
Bra DOP (Protected Designation of Origin – PDO) is produced in two different types: “Bra Tenero” (soft) and “Bra Duro” (hard).
Both types have a cylindrical shape with flat sides. The minimum ageing should be 45 days for the soft type and 180 days for the hard one. Carla matures its products in Castelmagno at 1,700 metres in cool, damp cellars that guarantee the product’s high quality.
Bra Duro, has a dark grey and consistent rind, a pale-yellow interior with small eyes and a spicy and savoury taste, especially if aged for a longer period. The soft type, which has a light grey, smooth and regular rind, has a pleasant aroma and a less intense flavour.

I segreti di Carla (Carla’s Secrets)

Once upon a time there was the Alta Langa Butter factory, a company dedicated to making butter and cheese the traditional way, guided by the great experience of Mr. Giovanni.  Today that company, now called “Carla’s Secrets” has grown thanks to Carla’s studies and her love for the work carried out by her father before her.

The company’s core products are the “Burro del Pozzo” (butter once stored in a well), a unique and highly appreciated butter that is made from the cream obtained after carefully and thoroughly churning fresh milk, “Burro del Pozzo with truffle” and “Burro del Pozzo in water “where water was used as a preservative to isolate the product while maintaining its characteristics.

The “Very fresh” and “Fresh” cheeses are much sought-after for their extraordinary delicacy and variety of flavours .
