Description

SOLA BOTTERA (Aged cheese)
A cheese typically produced near Cuneo, between the Alps and Langhe’s area. The Sola or Sora has the shape of an irregularly shaped square and it’s made from cows milk. The crust flowers with many colored molds, and this depends on the aging process and the humidity level in the cellar.

PAGLIETIN ALLE VIOLE  (Small Tuma cheese with violets)
Pagliettin  is a tuma with characteristic white rind and a delicate flavor, made with cow, goat and sheep ‘s milk with a soft consistency ivory-white crust. After a few days of seasoning it becomes more creamy making this small cheese soft and tasty. Violets are an antique garnishment rare to find nowadays, giving a fresh scent to this cheese.

PERRY
A lightly aged cheese with a white crust, made from cows, goats and sheep milk and flavored with Pears. This traditional cheese was often produced by local farmers and now, is made using the same ancient recipe.

CIABRA  DI CAPRA (Goat cheese)  
Cylindrical cheese with white rind and ivory white paste, made from goat’s milk, rennet and salt. Good for all occasions, it is ideal a good cheese platter.

BLU BOTTERA (Aged in charcoal and chestnut leaves)
With a white cream color and a minimum aging of 20 days, this cheese has got a delicate flavor due to the molds present in the dough.
You can get a stronger flavor by continuing the ripening and finally keeping this cheese inside in charcoal and chestnut leaves.
