Description
TESTUN refined in BAROLO DOCG wine (Controlled and guaranteed origin denomination)
A sharp cheese aged for 140 days on wooden shelves in a tuff cellar. This cheese must age slowly and benefit from the natural microclimate of the cellar and the air from our hills. Once it reaches its optimal age, this cheese is placed in Nebbiolo and Barolo grapes for about one month until the Testun has taken on the color, scent and flavor of these wine.
BIANCO SOTTOBOSCO (White soft cheese with black truffle)
Created for themore refined palette, Bianco Sottobosco is truly a special cheese that, in one bright and crumbly mixture, contains delicate and harmonious notes and jealously guards’ large pieces of black truffles.
The aging process is most important and occurs in a cool tuff cantina where the ideal constant temperature is maintained not artificially, but by thick stone walls. During the aging process, the distinct aroma of the truffles emerges and only when the cheese is fully impregnated with this scent is it ready. When it’s ready to be tasted, each small size weighs around 0.5 kg and the large one 1 kg.
Beyond being delicious, Bianco Sottobosco also has important nutritional characteristics: it is easy to digest, rich in protein with high levels of calcium, phosphates and vitamins A and E.
BULE‘ (Cheese with mushrooms)
A lightly aged cheese with a white crust, made from cows, goats and sheep milk and flavored with chopped mushrooms. This traditional cheese was often produced by local farmers and now, is made using the same ancient recipe.
PAGLIETIN (Cream cheese)
Pagliettin is a tuma with characteristic white rind and a delicate flavor, made with cow, goat and sheep ‘s milk with a soft consistency ivory-white crust. After a few days of seasoning it becomes more creamy making this small cheese soft and tasty.
BLU BOTTERA (Blue cheese)
With a white cream color and a minimum aging of 20 days, this cheese has got a delicate flavor due to the molds present in the dough.
You can get a stronger flavor by continuing the ripening and finally keeping this cheese inside in charcoal and chestnut leaves.
LA CASCINOTTA
Cascinotta cheese is a true Tuma cheese made from sheep and cows milk. It is simple, slightly aged with a soft consistency. It is aged, according to old traditions, in a tuff cantina where the constant ideal temperature is maintained only by the thick stone walls. After being salted, is placed on cheesecloth. This natural fiber very slowly absorbs only the excess humidity leaving the cheese its natural softness.
