Description

MURAZZANO DOP

Is a fresh cheese made using whole sheep’s milk or a combination of sheep-cow, in a proportion not less than 60%.
The sheep’s milk used for the production of this cheese comes mainly from the native breed of Langhe Sheep bred in the geographical area covered by the Protected Designation of Origin (PDO).
This cheese has a cylindrical shape with flat sides. It has a milk white paste, and its slightly thick texture is soft and sometimes presents small, irregular holes. There is no rind, its colour is milk white for fresh forms and pale yellow for the more seasoned cheese.
It has a subtle flavour, delicately scented with a pleasant hint of sheep milk.
Today, each single form is still made by hand.

BUR DEL POSS in water

Fresh cream butter, made only with the milk from valleys of the Cuneo area. The colour is pale yellow in summer when the cows feed on grass becoming slightly paler in winter when they feed on hay.
The flavour is unmistakable and delicate; the aroma is that of fresh cream.
The conservation in water (“Poss” means “well” in dialect ) means this butter is always fresh and is delicious eaten as it is. To enjoy the butter at it’s best try it at room temperature.

BUR DEL POSS with black Truffle

This is one of the many secrets of Carla that combines the sweetness and freshness of the butter with the aroma and intense flavour of black truffles (minimum 7%). With its unmistakable flavour of cream and truffle it is perfect to spread on warm canapés, as a sauce for pasta and eggs, or to flavour any dish you wish to add a bit of character to.

MATURE MARMURIN (Soft, slightly aged cheese)

Soft cheese, made from raw cow’s milk, rennet and salt.
It is aged for 30 or more days in cool, damp cellars at 1,700 metres in Castelmagno.
The cheese has a cylindrical shape with flat sides. The light-straw or brown coloured rind is thin, smooth and soft. The interior is pale straw white and dotted with tiny holes; the flavour is delicate and slightly aromatic.

DOLCE BLEU (SWEET BLEU)

Blue-veined cheese whose ingredients are: cow’s milk (from France), salt, lactic ferments and rennet.
It has a cylindrical, regular or slightly oval shape and the rind is white and edible.
The cheese is soft, white and cream with a few holes; the blue veins range from blue to light green and it has a delicate and aromatic flavour.
