HAM FLAKE (Fiocco) – Italian prosciutto
Fiocco prosciutto is the flagship product of the Colli company.
It is produced starting from the careful selection of thighs of heavy pigs to obtain a final product of a size above average and of incomparable taste.
The raw ham flake is a very lean cured meat, with little fat, protected by its natural rind and by the “fat of suet” expertly spread to soften the lean part. It allows a proper curing in environments with controlled humidity.
When cut, it has a decidedly homogeneous slice, both in color and compactness. The sweetness and the persistent pleasantness that is felt in tasting this cured pork meat derive from the handmade salting. Only the long aging prosciutto, from about 6 to 10 months, makes possible the intense fragrance that is released in slicing it.
Il Fiocco di Prosciutto Crudo is a very high quality cut: the goodness of its meat, its flavor make it a “special” product.
The most tasty and traditional combination is accompanied with bread, butter curls and a sparkling wine from his homeland: Emilia. We like to propose it in combination with a Franciacorta Brut Rosè or a Bianco sparkling wine. Once sliced and before storing it in the fridge, we suggest to wrap it in a cotton cloth moistened, possibly with white wine.

Mr. Colli’s sausage factory is located in San Polo d’Enza, in the province of Reggio Emilia, among the green hills of Val d’Enza.
The company’s history dates back to 1976 when Carlo Colli, thanks to his experience, decided start from scratch the production of national raw hams in a very small laboratory. In 1992 the Colli family decided to transform the individual business into a company, with the production of culatello and flake ham, fiocco di prosciutto. In 2002 the production have been specialized in the production of the less common products in the area: culatello cuts with rind and flakes.
Today, these two specialties cover more than 90% of the production, anyway salami and other typical products of the Emilian delicatessen, such as Coppa meats and Pancetta salami (Italian Bacon) are also made and seasoned by the Colli family.
In order to guarantee the highest quality, Carlo Colli personally takes care of the production of its products: the choice of pork legs, which are strictly Italian, the boning and all the stages of processing until salting and ageing. Colli is now nationally recognized for the quality of its products.
The secret of this success lies in Carlo’s great experience, in the specialization about a few products and in the craftsmanship of the processing method, that has remained unchanged over the years.
