Italian Durum Wheat

With its fragrance and a delicious flavour, Italian durum wheat semolina pasta by Pastificio Baradello is the ideal ingredient for a balanced and healthy diet as it is high in protein, minerals (potassium, iron, phosphorus) and vitamins too.
The presence of carotenoids such as lutein and beta-carotene gives the pasta its distinctive intense yellow colour.
The toughness of its gluten ensures an excellent performance in every dishes.
As “Durum” line Pastificio Baradello, only uses organic durum wheat semolina, organically grown and ground in Italy, excellent for making a top level Italian pasta.

 
Senatore Cappelli Durum Wheat
The forerunner to modern durum wheat, “Senatore Cappelli” was created by
agronomist Nazareno Strampelli in 1915 by crossing native Southern Italian durum wheat with other wheat from Mediterranean countries. It was given this name in honour of Abruzzo marquis Raffaele Cappelli, who encouraged Strampelli in seeding trials, giving his fields. Cappelli wheat, versatile and rustic and of the best quality, is still grown in Southern Italy, suitable to produce gourmet pasta with a traditional flavour.
It contains a good percentage of protein, fibres, amino acids, vitamins and minerals. If compared to common durum wheat, it is less refined and more digestible thanks to the lower gluten content.
For “Ancient grain” line Pastificio Baradello uses Senatore Cappelli organic durum wheat, coming from mills with certified supply chains.

 
Whole Spelt Wheat (Triticum Dicoccum)
Spelt wheat is a cereal with ancient origins that has been part of the Mediterranean diet for centuries.
Despite having been replaced by other cereals giving greater harvests, the cultivation and consumption of spelt wheat is gradually uprising again.
Compared with other crops, it adapts well to land short on nutrients, is resistant to the cold and parasites, and does not need pesticides or any particular chemical treatments. It is low in fat, rich in mineral salts and vitamins, with a good protein content and concentration of fibre, more digestible than other cereals thanks to the low gluten content.
For “Farro” line Pastificio Baradello uses whole organic spelt wheat semolina (Triticum Dicoccum).
The production of spelt wheat is more expensive, if compared to that of other cereals, because of a low yield and the need to eliminate the protective casing of the seed after threshing. Is used only whole spelt wheat semolina, not other grains because, being more suitable for making fragrant, tasty, high quality pasta.

Pastificio Baradello is an artisan company, a run family business specializing in the production of high quality dried pasta. It is located in Colverde, one of the most charming hilly areas a few kilometres far from the famous Como Lake.

Thanks to passion, love and dedication, pasta is made with very fine raw materials to guarantee an excellent product. Many years of experience, gained working simple ingredients like water and semolina flour, ensure a pasta rich in traditional flavour, able to satisfy the most demanding palates.

With three fine organic semolina types: durum wheat, Senatore Cappelli durum wheat and whole emmer wheat. The selection of certified producers is made with a painstaking, thorough and widespread research all over Italy.

The production and all the processing phases are made with rhythms typical of the pasta-making tradition. Artisans pasta makers strive to maintain the high quality of their product, dedicating all necessary attention to every single phase, from the preparation of the dough through to packaging.

The dough is prepared with the right structure in terms of proteins ensuring excellent cooking properties. Special machines’ vacuum system prevents the dough from oxidising during the cooling process, preserving its sensory qualities.

The slow and low temperature drying process on their wooden frames preserves all of the typical sensory characteristics and fragrances of fine organic and natural wheat. Finally, pasta is packaged by hand for offering a top quality product in perfect condition.

Pastificio Baradello produces a range of short-cut and long-cut pastas: the bronze die process gives the pasta its typically coarse and porous handmade look, enabling all kinds of sauces to cling to it.

The owners have made a choice based on taste but also sustainability: to be organic and to acquire organic certification; They have attained Organic certification in accordance with European directives (EC) 834/07 and (EC) 889/08. Compliance certification no. 02208/100457/363/16 of 28/12/2016. Issued by Q Certificazioni S.r.l. (IT BIO 014) – inspected company no. 100457. Also the bags are 100% recyclable.
