Description

Italian linden honey

Odour/aroma: very aromatic, fresh and menthol

Harvested in July, this honey derives from the sweet smelling nectar that bees collect from the flowers of wild linden trees.
This variety of honey is produced in mountainous areas that are also home to chestnut trees, thus the presence of a small amount of chestnut flower nectar gives it a slightly bitter aftertaste. By virtue of the beneficial properties, linden has always been considered an excellent decongestant and natural tranquilliser. The preparation of herbal teas made with linden leaves and flowers and the addition of this honey, helps promote restful sleep.

Italian chestnut honey

Produced in July, this honey originates from the nectar that bees collect from the flowers of centuries-old chestnut trees that live in the mountainous valleys of Cuneo. Thanks to its typically bitter flavour, this chestnut honey pairs perfectly with cheeses, particularly those that are more mature and spicy.

Italian forest honeydew honey

This honey, produced at the end of summer, originates from “honeydew”, a sweet substance that is found on the leaves of trees. This natural phenomenon is heightened by the presence of an insect that feeds on the leaves, promoting the production of “honeydew”. Thanks to the nature of honeydew production, this honey is particularly precious as it is rich in mineral salts and iron. This variety of honey pairs well with tasty and spicy cheeses.

Italian honey vinegar

Honey vinegar has ancient origins; it was in fact used by the Egyptians at least five thousand years before we knew about the world. As it is made with honey, this vinegar retains the qualities and properties of the plants and flowers that bees visit during the harvesting of nectar.
Honey vinegar, which derives from “honeydew”, from the nectar and from the enzymes secreted by the bees, is produced through a completely natural process that does not require pasteurisation or the addition of preservatives.
After the first phase in which honey mixed with water undergoes alcoholic fermentation, the alcohol is transformed into acetic acid by bacteria whose action is favoured by the skilful combination of particular temperatures and aeration methods. Golden in colour and very fragrant, honey vinegar is rich in enzymes and mineral salts. Easily digestible and characterised by a pleasantly acidic taste, this vinegar is particularly indicated in all dishes where traditional wine vinegar is used. It is ideal used as a dressing in various kinds of salads, in the preparation of sauces and in enhancing the flavour of meat and fish dishes. In addition, by adding a tablespoon of honey vinegar in a glass of water it produces a refreshing drink that favours the restoration of the intestinal flora.

Apiculture Daniele Devalle

The roots of our company lie in the renowned hills of the Langhe, in the Piedmont region where, in the 1980s, Daniele Devalle a young man with a strong business sense, starts taking an interest in apiculture to pursue the passion he had for bees since childhood.

His interest in beekeeping, which at the time was not very popular, emerged after meeting a local beekeeper from whom Daniele and his mother would buy jars of honey. Fascinated by the world of bees and captivated by the stories told by the old beekeeper, Daniele decided to make his very first beehive at the age of sixteen: cherishing the advice and secrets the beekeeper had revealed, he began dedicating his time entirely to beekeeping, making new beehives and attending a special beekeeping school.

The beekeeping courses and the experience gained in working with Italian and International companies allowed Daniele to acquire even more in-depth knowledge and to perfect his honey production techniques: what seemed like a simple adolescent passion turned into a true profession.

Right from the very beginning, Daniele’s main objective was to produce honey and other high quality beehive products, without ever forgetting the importance of respecting bees and the environment.

Today, our company has over 200 beehives and is appreciated in Italy and abroad, especially by those who are looking for high quality products that arise from a combination of dedication and respect for nature.

Thanks to his wife Luisa and his son Matteo and his daughter Giulia for their valuable contribution, they are now looking to the future with the aim of taking the company to the next level: the desire to explore new markets by promoting the production of precious honeys is the basis of innovative company decisions that still maintain the traditions that have always accompanied the growth of the company.

    It’s different from the honey that I use for cooking every day.
    I’ve also discovered new flavours by pairing it with sweets and cheeses.
    The vinegar is very refined.
