Pastificio Baradello is an artisan company, a run family business specializing in the production of high quality dried pasta. It is located in Colverde, one of the most charming hilly areas a few kilometres far from the famous Lake Como. Thanks to passion, love and dedication, pasta is made with very fine raw materials to guarantee an excellent product. Many years of experience, gained working simple ingredients like water and semolina flour, ensure a pasta rich in traditional flavour, able to satisfy the most demanding palates. The production and all the processing phases are made with rhythms typical of the pasta-making tradition.

Pastificio Baradello has a range of short-cut and long-cut pastas, so you can make any kind of recipe that takes your fancy. Variety is also guaranteed thanks to the choice of 3 fine types of semolina: durum wheat, Senatore Cappelli durum wheat and whole emmer wheat.

The drying process, static and at low temperature, is made through a new generation kneading machine equipped with a vacuum seal rotating valve. Its extruder is equipped with a forced cooling system ensuring a working temperature stable at around 36°C for the best products. Baradello uses a shaping machinery with bronze dies for a coarse pasta surface.

The owner have made a choice based on taste but also sustainability. They have got the Organic certification in accordance with European directives (EC) 834/07 and (EC) 889/08. Compliance certification no. 02208/100457/363/16 of 28/12/2016. Issued by Q Certificazioni S.r.l. (IT BIO 014). Also the bags are 100% recyclable.

Spelt wheat is a cereal with ancient origins that has been part of the Mediterranean diet for centuries. It is low in fat, rich in mineral salts and vitamins, with a good protein content and concentration of fibre, more digestible than other cereals thanks to the low gluten content.
For “Farro” line Pastificio Baradello uses whole organic spelt wheat semolina (Triticum Dicoccum).
